Developed to meet the demands of professional kitchens while remaining thoughtfully suited to everyday home cooking, the Pateru Warikomi Series balances strength, sharpness, and ease of care.

The Gyuto is a versatile all-purpose knife, combining the precision of Japanese craftsmanship with the familiarity of a Western chef’s knife. The 21cm blade offers excellent balance and control, making it ideal for meat, fish, vegetables, and everyday kitchen tasks.

A high-carbon AUS-10 stainless steel core provides excellent edge retention and stain resistance, while softer stainless steel layers on each side make the knife easy to resharpen over years of use. Precision laser-cutting, expert heat treatment, and hand finishing ensure consistent quality and performance.

  • Size: 21cm blade length
  • Material: AUS10 high-carbon stainless steel core
  • Hardness: 61±1 HRC
  • Blade: 3 Layers, Double beveled & Full tang, Matt finish

What makes our products so special

What’s in the box?

Our products are made with love and care in Japan, but it’s with you where their story lives on. And for that to happen, we need to make sure they arrive with you in one piece! We carefully wrap each item in bubble wrap and traditional Japanese newspapers (you’ll often find a Japanese crossword or sudoku to solve!). You’ll also receive a short guide on how to care for and cherish your new tableware. Sustainability is important to us and we’re working hard on ways to keep items safe while being kind to the planet, too.
