Code: Nisaku-3010

The Nisaku Wavy Bread Knife is an innovative serrated wavy design that cuts smoothly with both a push and pull motion - a patented advancement in Japanese knife engineering.

Unlike conventional blades that cut effectively in only one direction, this new structure connects two precisely shaped arcs - one optimised for the push, the other for the pull - forming a seamless, continuous wave edge.

Developed through over 100 prototypes, even a 0.2 mm variation in arc or angle was refined by hand to achieve precise, effortless sharpness.

Each blade is hand-finished by skilled artisans, ensuring smooth cutting performance for bread, vegetables, and soft foods.

  • Size: 30.5cm blade length, 44cm total length
  • Material: Stainless Steel 420J2
  • Handle: Natural Wood

Crafted in Tsubame, Niigata, this knife represents the union of Japanese craftsmanship and modern design, earning the Good Design Award 2016 for its innovation and usability.

What makes our products so special

What’s in the box?

Our products are made with love and care in Japan, but it’s with you where their story lives on. And for that to happen, we need to make sure they arrive with you in one piece! We carefully wrap each item in bubble wrap and traditional Japanese newspapers (you’ll often find a Japanese crossword or sudoku to solve!). You’ll also receive a short guide on how to care for and cherish your new tableware. Sustainability is important to us and we’re working hard on ways to keep items safe while being kind to the planet, too.
